However, when you have become food sanitation supervisor, you need to take a lesson periodically.

So, if you open your restaurant in Kawasaki city, your food sanitation supervisor needs to take a lecture every 3 years ( Even if you took your qualification in Yokohama city. )
So, the content of this standards differs depending on municipal government.
You can not become a food sanitation supervisor for plural restaurants at the same time.
And food sanitation super visor should be full time employee or manager of your restaurant.
When you have taken a lecture, you need to prepare name plate that can indicate name of food sanitation supervisor.
Fire prevention manager ( Bouka kanrisha )
In the case, the number of capacity of your restaurant is 30 or more, you need to appoint fire prevention manager ( Bouka kanrisha ).
There are two type of fire prevention manager ( Bouka kanrisha ) license.
Total room area of your restaurant is more than 300 ㎡
Total room area of your restaurant is less than 300 ㎡
In order to become a fire prevention manager ( Bouka kanrisha ), you need to take a lecture conducted by association or authority concerned.

It will take about 5,000 yen to take this lecture.
In the case of Kou shu license, you can obtain this license within two days.
In the case of Otsu shu license, you can obtain this license within one days.

If you submit necessary documents 3 days prior to completion of construction, officer can not come to your office after several days of completion of construction. Then, it will hold off commencement of your operation.
You cannot submit necessary papers by post, but you need to go to local public health care office.
After you have submitted necessary documents to health care center, officer of health care center comes to your office to inspect facility.

As for material of floor
Material of floor should be made by tile, concrete etc that has water resistance.
And it should be well drained, easy to clean.
So, you can not use wooden floor.
But, this items is pertaining to kitchen.
So, you may be able to use wooden floor in room for customers.
As for inner wall.
The inner wall should be covered by material of waterproof ( at least 1 meter from floor ) and easy to clean.
As for partition.
You need to divide each section ( Kitchen, area for customers ) by wall, board etc.
（ If the number of customers are small, you do not need to satisfy this standard ）
As for brightness.
The brightness should be more than 50 lux
( As for space of employee ).
If the brightness of kitchen is not enough, you can not take care of sanitation properly.
As for ventilation.
You need to prepare fan for customer space and employee space separately.

You need to prepare screen door ( amido ), shutter at fan, wire mesh to prevent from mouse, insect.
As for dressing room
You need to prepare dressing room outside of kitchen.
It may be sufficient with box to put your clothes.
You should not change your clothes in the kitchen.
